The simplest side-dish, ready in 20’.



Inspiration:

I love the mix of sweet + savory (& so simple, hey-oh!) with these carrots. They go perfect on top of greens, as a side-dish, or even leftover with some cottage-cheese as a snack.

Ingredients:

1 lb carrots - assorted colors if you wish
1 Tbsp olive oil
1 Tbsp maple syrup (use the real deal!) or honey
Salt + pepper, cinnamon, rosemary or thyme

Instructions:

Roast

Preheat the oven to 425.

While the oven is heating up - wash, peel + chop your carrots (or if you are into saving time, keep an eye out for pre-cut/peeled carrots at the store).

Toss with olive oil, maple syrup (or honey), salt + pepper, cinnamon & rosemary or thyme.

Place in pre-heated oven and bake for 20 minutes.
